According to this FaQ site: Frequently asked questions for Sales Insights | Microsoft Docs

Notes analysis is also featured for German language, amongst others.

But: Which exact expressions do we have to use? Since even in english not all terms are working I wonder how I should find the right words to make the feature work for German customers

Second question: The notes analysis feature e.g. to create a task or appointment based on my notes only shows, if I change the User interface back to English. If the User uses his German Interface (which they usually do) then the feature does not show. Feature or bug? Will this be fixed sometime? Are there any other settings, which are not documented in docs I have to set, so that Users can use this feature really in another language than english?

According to your description, this could be a bug. I recommend you open a ticket to contact Microsoft.
