Are you talking about the standard team entity? That's an organisation owned entity- it can't be owned by a specific user, so you can't control the permissions to it on a user by user basis. If a user has write permissions to the 'team' entity- they'll be able to edit all team records in your environment.
This is how you can tell the ownership type of an entity; If you open any security role- navigate to the 'business management' tab- you'll see team near the bottom. See that it doesn't have 'assign' and 'share' permission options? Like the 'competitor' entity in the option below? That mean's it's organisation owned.

So, you can't use the security roles to solve this problem. The best way to go about this is to go back to your use case- what are you trying to achieve? Do you have a custom field on the team entity that you only want certain users to be able to change for instance? In that case, you could look at a field security profile. If it's something else- please let me know and I'll do my best to come up with some possible solutions for you!
