Beginner needs help to get started

Hello Community.
I need help getting started.
Our service provider for Dynamics is now setting up the first sandbox. We are getting the D365 F & SCM and probably also Sales and Field Service. 
I am in the role of the pending application manager. 
While our service provider configures and sets up the system, I would like to familiarize myself with it. But how and where do I start?
I have access to the LTS and the complete D365 system. We have this in the cloud.
Do you have any recommendations on how and where I can best start? 
Is there an introductory thread?

    There is a certificate that talks about D365 Fundamentals. You can read it's material as a start.
