Hello everyone,
I was hoping to find out if Dynamics GP has the functionality to read pdf files in the payables management module, similar to some cloud-based softwares.
Essentially can you upload an invoice and have GP read the relevant information - e.g. supplier, amount, etc?

It sounds like you are looking for Optical Character Recognition (OCR) capability. While this functionality is not available in the core GP product, there are many excellent payables automation add-ins with GP integration that provide this feature.
Docuware and Papersave are two we have used in the past.
Solugence has a nifty finder and category listing.
