Quick Create: Phone call record for incoming calls & Auto-populate phone number field

When we make calls through the field service system to contacts, a phone call quick create form pops up. Is there a way for this to happen when there is an incoming call? Additionally, is there a way for the quick create tab to auto-populate the phone number- Not too sure why it wouldn't do this oob since we are calling through field service and the contacts all have their numbers in the system.
