Performance is a very tricky thing. As mentioned performance should be better evaluated when the current system is running with multiple users.
You can have scenarios where the performance is fine when using a couple of users, but the more users there are, the more requests there will be and this could impact performance.
Regarding the 800 fields. If you are currently using UCI, this will have less of an impact compared to the old UI. UCI only loads loads the first tab, and as you open the new tabs (sections) it will load once at a time. Making the pressure on the form way less.
To avoid performance issues in this type of scenario, I would say for you to try to divide these fields as much as you can in sections (Tabs), this will make it better.
Alternatively, you can always open a case with us, Microsoft Support if you get these performance issues.

Performance can only be evaluated when multiple users are working at the same time.
It can not be evaluated based on one user using the system.
I would recommend to provision new environment for load testing and evaluate the impact.
It also depends on the amount of data you have in your instance.
