Hi All,
I want to set up a scoring model for contacts because we are not using Leads.
If I go from the entity Lead Scoring Model, it will works for Contacts as well? I can't find any other option.

Thanks for reaching out!!
Currently scoring model is just for leads only. Though you can use lead contacts in conditions while setting up the scoring model as shown below.

Just another question: I want to be able to observe the score over a given period of time. The scores must therefore be associated with a date. Is that possible?

Yes you can use custom feature in date range to see that. Below is the screenshot -
