how to restrict sales invoice from being edited in Business Central when the posting date is not equal to the current work date

    You can only achieve this through customization.
     
    Note that some fields are still editable despite the 'Released' status such as Order Date, External Document No etc.

    You could create some small validation, which in this case is changed to the "release" state, this state does not allow editing of the document. I hope I have given you some ideas.
