We've just set up a Dynamics 365 Customer Service hub for managing our internal ticketing system. Since all our customers are internal, we'd like to import our AD / Azure AD records to populate our customers list as well as the asset manager component and make sure it dynamically updates. It looks like we can do a bulk import using Excel templates, but ideally it would keep itself populated with AD changes as they're made.

on https://powerapps.microsoft.com/en-us/blog/announcing-the-aad-user-virtual-table-find-and-add-any-aad-user-to-your-records/, it has been recently announced that there's a virtual table that contains all AAD users, and is available within Dataverse. You can populate controls on this particular table within your forms if required.

Thanks! I'm not building forms though, I'm trying to populate the contacts list in Customer Service Hub. I know there's a "Flow" option in the toolbar but without knowing how to build custom Flows I'm afraid of breaking the instance entirely.

You can (and should) use a sandbox environment to test everything before going to production. Also, you can use the AzureAD connector with a PowerAutomate to retrieve all users in your AD, and then use the Dataverse Connector to create the data within contact table.
