With the Wave 2 2022 Update, we are having an issue with Modern Advanced Find. It does not let you sort more than 1 column. For example, a Customer Service view would sort by Priority first, then Created On.

What do you want to do with Modern Advanced Find?
If you want to sort multiple columns to filter the view:
Way1:
(1)Click on the first column header
(2)Hold down “shift” key
(3)Click on the second column header.
Way2:
Enable the ‘Power Apps grid control (preview)’ for the case entity:

If you want to save the sorted view as new personal view, way2 can only make the last sorted column remain.
Or you can turn off modern advanced find feature to bring back old advanced find:
