After upgrading to GP 18.2.1060 client decided to switch to Exchange from MAPI for emailing invoices. Now when invoices are emailed they immediately are sent as opposed to sitting in the user's outbox where they can edit the subject line. Is there any way to have GP not do that and return to the way it was?

I don't remember that when you are using the 'Exchange' way setup to e-mail statements or invoices that you could 'edit' the message title before sending it out..
I've tested this on a regular GP 2018R2 (18.0.0628) and the e-mail was sent out immediately after I hit the button in the customer card.. and about 30 secs. later I received a notification in my inbox for the customer statement.
I just tested the SOP order e-mailing and it behaved identically. Less than 10 secs later it landed in my inbox.
The behaviour you described likely only happens when you use the MAPI client, as it pops up a new message from Outlook where you can make some changes prior to hitting the send button..

Béat is spot on, you cannot edit emails that are sent out via Exchange.
You are only able to do this using MAPI.
