I have created a list of subjects for cases, broken down into a Parent Subject and Child Subjects.
I would like to know if there is any way to display the Parent subject on the case and in reports, could be a read only field on the case form that automatically populates from the selected child subject?

You could use D365 workflow to do this.
1.Create a new lookup field related to Subject named "Parent Subject".
2.Create a new workflow, I don't know your trigger condition so I set it as on-demand workflow.
3.Add an update action, update the case entity, and set the parent subject value to "parent subject" field.
