change the value of a field when X amount of days have passed?

Hello community,

I am looking for a way to have an invoice's duedate field be checked in real time (as in compare it with today's date) and then update the value of a multiple options field "new_options", then create a new task record when one week has passed.

Furthermore I'd like to update the new_options field yet again and create another task when due date has been exceeded by another week.

All of this should happen automatically, as in the user shouldn't have to manually op

What would be the best way to achieve this functionality in a way it'll work automatically and autonomously whenever a record has been created or updated?

    You can use Power Automate flow to check the due date against the current date (schedule it every day or when needed). When condition satisfied, update the OptionSet field accordingly and followed by create a task record as required.
