I am very new Dynamics 365, we currently have D365 Customer Service workspace app live. We have one major big project coming in and we want to have parallel development done so want to check is it feasible in Dynamics 365 to have more than one Customer Service workspace app on the same dataverse so we can do stagged approach for the changes so both are available at the same time??
Ex one Customer Service Workspace with Omni channel
one Customer service workspace without Omni channel
Any information/guidance for the same would be great.

Short answer, no. Each "Customer service wokspace" is deployed into an environment. Out of the box applications are only deployed once to environments and you can't duplicate or clone. Going one step beyond: The recommended approach is to have different environments, so production is left as production, but development/integration/Test is done in another environment separated. IN this scenario, you can go to Admin.PowerPlatform.com and provision a new environment of type "Sandbox". You can leave this new environment "empty", or perform a copy from your production (so it contains the same customizations & data).
