under Payroll Employee Setup->Employee Vacation Pay.
Should I create a smartlist that generates the remaining vacation units left for the calendar year or create a custom SQL view that would calculate this. Nevertheless, what table do I use?

The best table resource for YTD values per pay code (including sick/vacation) in Dynamics GP would be the UPR30300 (PR Transaction History) table.
