I am wondering if the CRM Outlook software works with Office 365 versions of Outlook? If so what version is needed. I know Microsoft is looking to get rid of this to focus only on the CRM Outlook app but I'm curious if the software would still work with office 365.

The following Office 365 version of Outlook will work for Dynamics 365 Online and On-premise.
Microsoft Office. One of the following:
Office 2016*
Office 2013

Note: Effective March 2020, the legacy Dynamics 365 for Outlook (also referred to as Outlook COM add-in) is deprecated. Customers must transition to the modern Dynamics 365 App for Outlook before October 1, 2020. Microsoft will continue to provide support, security and other critical updates to the Outlook COM Add-in until October 1, 2020.

Thank you. But does this mean the Outlook COM add-in will work with Office 365 then? Just that support for it won't be available after October 2020?

Yes Outlook COM add-in will work with Office 365 Outlook Desktop like Office 2016* and Office 2013 etc
Yes the deprecation Outlook COM Add-in until October 1, 2020 and yes the support will be limited.
We would recommend to migration as soon as possible to the Dynamics App for Outlook and complete the migration by October 1st, 2020.

I work with Microsoft Dynamics CRM Premier support and work specifically in the Email and Office integration with Dynamics 365. You cannot use the Dynamics CRM Outlook add-in with Office 365 versions of Outlook or (OWA). The .com add-in is a plugin that ties directly into Outlook desktop and can not be utilized within OWA.
As others have stated the .com add-in will be deprecated soon as we transition our customers to the Dynamics 365 App for Outlook and this add-in can be utilized within Office 365 versions of Outlook without issue. The main prerequisite in adding the D365 App for Outlook is to enable server side sync.
