Dynamics CRM Hybrid Implemetation limitations

Does anyone know the limitations we incur if we choose to do a hybrid implementation Private cloud (On-Prem with Azure Host) vs Public Cloud implementation?  

I am looking for some detailed documentation but it seems fairly scarce. Could someone chime in and give me some leads?

All blogs and documentation I find mention that a hybrid implementation essential gives you a on-prem environment with the cloud services and features. To me this is vague, maybe I'm asking for too much but I am really looking for more specifics of the features we would get and the limitations for hybrid implementation.

    If you go to a private cloud for Dynamics 365 / CRM then you are just installing on-prem version in virtual servers in their data center.  So you get the backup /Disaster recovery benefits but you are not on the online version of Dynamics 365 / CRM.   So you will be using Dynamics 365 Customer Engagement 9.1 and not the online version that has Power Platform, etc..
