Wondering if there is a way that a workflow would send an email to the a user which would show them all the records they are the owner of for an opportunity. Is that possible, if so how?

What is trigger point to send an email, when do you want to send an email?

What trigger type did you select for a Flow? "List Records" can't be the trigger for a Flow.

I don't see a "List Records" option which is the second step in this flow per the link you provided.
