Does it matter if the Currency ID is not selected in the Currency ID field for a new bank account? It's greyed out so I can't select anything.

It appears that the Currency ID may be greyed out because Multicurrency is not registered (MDGP > Tools > Setup > System > Registration). Once enabled you could setup your functional currency, for example, USD (MDGP > Tools > Setup > Financial > Multicurrency).
Now whether you setup functional currency or not is entirely up to you, however, it I would recommend you do so.
