We're looking to setup notifications in the Employee Self-Service section of Talent. I know there is the option to create alerts, but it only sends notifications when a record is deleted or created. The client wants to receive notifications whenever they are changes made. We've been able to create notifications in flow if changes are made in Core HR module. We're looking to do the same for Employee Self-Service. Does anyone have an insight on the process?

I truly hope that you are correct and I am wrong. I do, however, keep hearing more and more from reliable sources that async workflow will be deprecated.
Not really...Microsoft is pushing flows, but it's going to take a long time until they will become deprecated. Microsoft has many onpremise customers which are not forced to adopt the cloud way...
so nothing to worry for the next 5 years.

I'm doing these with PowerApps Workflows (not Flows), but this requires PowerApps knowledge (OR Dynamics CRM) and also setting up the email router and queues.
