I want to show statistics of web API calls to Dynamics 365, some information such as number of timeout requests and detail of it, number of requests at a moment,...

but I tried it, It only show for system API calling not for custom web API calling, and it isn't detail enough. :(

You can go to the Power Platform Admin center
Then select Analytics > Dataverse. There is an analytics section covering API Calls Statistics.
