I would like to understand if the data encryption feature mentioned in this document is for all the data in dynamics or it just for username and password kind of fields when we provide our key for encryption. It would be helpful if anyone having used this before and provide some input

If you have 1000 dynamics enterprises license you can use managed encryption key features learn.microsoft.com/.../manage-encryption-key
Our implementation is on premises.
