Hmm, I haven't tested office 2021 with Dynamics AX 2012 yet. Do you have any problems with the operation of these programs? Personally, I don't use office that often, but I still decided to use key office 2021 pro plus to have advanced functionality, but then I changed jobs and rarely use this program anymore. I used to work in the field of SEO and often made some notes in the office 2021 program or stored important information about work. If you don't work with the office all the time, then I wouldn't advise you to always update it to the latest version.
