I use Word Template on a table with a Number column ordered by this column, but Word Template does not sort but prints rows of data in random order.

Records are listed in the order of the time and date they were created.

When you insert repeat content in word template, you are using records in the grid from related table, they can sort by any columns in Dynamics, but it can only be sorted by created time, which is by-design.
Maybe you can reorder it through using power automate to generate word template:
