We currently have production and sandbox (test) instances of Dynamics 365 Online. I understand that you can perform a manual copy of production to sandbox using the administration tools, however is it possible to refresh the sandbox image to the latest one on a timed interval - e.g. once a day?

Hi,

From my understand, you want to automatically refresh the Sandbox Instance to the latest Production Instance on a timed interval. If my understand is not correct . please let me know.

Actually, there's no such automatic function like copy Prod Instance to Sandbox instance on a timed interval from Dynamics 365 Administration Center. Since the instance copy operation still need to verify the copy type, target instance and settings adjustment.

You must customize a new API to automate the Instance copy task with adjustable Target Instance Id and Copy Type.
