We are canceling our Dynamics account and were told we should backup before canceling. I have no idea how to do it. Does someone know where I could find some instructions/documentation so I can get this done?

Talking about Dynamics 365 Online environment, backup files are not available to be downloaded. This information is documented here:https://docs.microsoft.com/en-us/power-platform/admin/backup-restore-environments#can-i-move-my-data-from-an-online-environment-to-an-on-premises-version
Basically, if your Dynamics 365 online subscription is being cancelled, the only way to keep your data will be export using Excel or Data Export Service (Azure subscription is needed for this one):
