Hi,
When tracking an e-mail with Dynamics 365 App for Outlook, the contact is shown with associated account.
Is there any possibilty to display the open opportunities under the associated account in the same view?

No, there is no way to display this information in that view. The fundamental problem is that an account may have multiple child opportunity records, and you can't show information from child records in this view
