Hi,
I'm not even sure if this is the right question to be asking or too broad of a questions but what is the difference between using the Dynamics tables vs building out Dynamics yourself using Dataverse. I'm wondering if there are any gotchas I need to be worried about if we go down doing a custom build of the Dynamics apps we need using Dataverse,
Thanks
The ideal recommendation is too use the OOB entities if it doesn't fulfil your business requirement then go with the creation of custom entities-
Microsoft Dataverse Basics #1 : Create Custom tables in Dataverse - Microsoft Dynamics 365 Community
and also to add DATAVERSE is not a database-
Dataverse is not a database - Power Platform Community (microsoft.com)

What I'm asking isn't what Dynamics is, but more so, what functionality would we miss out on if we used custom tables instead of the Dynamics tables.
Also if there is any reason we shouldn't use custom tables over the Dynamics tables.
Please look at below post which explains the same -
