Could someone please guide me through how to make a segment that pulls contacts who have registered for an event. I need this segment so that I can then send a confirmation email automatically to anyone that does sign up.

Am I right in saying that once I have set up a customer journey to send this segment an email, anyone who registers for an event in the future will be added to the segment and sent the email automatically?

Nice and simple, try this :).
Start with a Behavioural segment and just replace my Dynamics Forum event with your one.
(Segments > New > Behavioural > configure as per screenshot > Save > Check for errors > Go live ).
