Hello,
we're having some issues with tracking changes on an opportunity. Usually the field "Changed on" displays the last time changes on an opportunity are made. The problem is, that attached activities do not affect that field. So we can not check if the opportunities are being worked on or not.
Basically, we need a way to record times when activities are linked so we know that the opportunity is actively being worked on.

below is my demo
Account and phone call
I created a new field
Create a workflow
you see the field is updated.
but if you create phone call via social panel
nothing is updated, because the phonecall is completed as soon as you created.
so , add one more check.
Conclusion
- the record's modfiedon is updated too.
- it is not necessary to create a custom field, you can update any unused field in opportunity .

I think the best way if you write a plugin which will trigger when you associate any activity or when any changes happen means update of plugin and set the Changed On datetime value.

We had a similar requirement.
On our case the customer want's to know the last time that the sales guy interacted with the customer regarding the opportunity or vice-versa.
To achieve that, we've created a new datetime field on the Opportunity, then we've created a Workflow, e.g. regarding the email entity where we keep the "Created On" value and put it on field created on the Opportunity.

Hi,
if you refer to the activities : Phone call, task , appointment and etc
you can create a field in opportunity as date time, and trigger the workflow to update the field when activity is created.
