Something happened in our Dynamics CRM , the button to create a new Incident disappeared from the top ribbon. Not sure why, maybe because of an app we tried to experiment that messed with it. But now we don't know how to reset the Ribbon to it's normal state. Is there way to do this or to reinstall Customer Service Hub ?

Try looking at the Ribbon Workbench, either via XRMToolbox or install the solution (its free and done by a great CRM expert)
If it looks like this, you can right click and unhide it.
OR it may be missing a 'modern image'

Does Ribbon Workbench work with French language Ribbons ? I only can see English buttons
Thanks, the problem is that the ribbon that I see in Ribbon Workbench doesn't look like what I have in the App. I can't match the ribbon buttons with my actual view. We are in French, I don't know if it a problem ?
