great question and to be honest I find the Sales Accelerator tricky to understand and use,
As you pointed out already you checked the ownership of main record like contact, lead, etc and the related activity.
My suggestion for you is to double-check the settings of the accelerator:
Make sure you give the system some time to refresh once you updated the security roles as it can take some time.

The System Administrator role has full access to all entities and features in Dynamics 365, including all Sales Insights and Sales Accelerator components. This is why users with this role can see the "My Work" list without any specific Sales Insights roles needing to be explicitly assigned.
In summary, the most probable solution is to ensure that the non-admin users with the Sales Manager role also have the "Sales Insights User" security role assigned to them.
