I tried to use the report "Adjustments" under "Inventory > Inquiries and reports > " , selecting the reference “Counting” but the system did not gave me all the transactions that happened on a day for an specific item.
Is there any other way or a report that gives all the adjustments made in an item in a specific date range?

Have you checked the item transactions form for the new entrance created?
Another way is to check the GL vouchers. If you filter them by transaction and posting type you should be able to find the adjustment posting made.

What adjustment do you do with the specific item? Does it happen a cost inventory adjustment for a transaction?
If you need the inventory adjustment journal, you can use Cost management > Inquiries and reports > Inventory accounting - inquiries> Transactions and filter the adjustment journal.

You can see the inquiry about item transaction for this, the path is Cost Management> Inquiries & reports> Inventory accounting inquiries> Transactions.
You can add the required fields like Inventory reference, physical voucher, financial voucher, physical date & Financial date. Once you add the fields, you save the user setup. Once you do that, you can always filter the required inventory transaction data on the basis of this inquiry.

Is there a report in D365 that can gives you: (Opening Balance / transactions during the month / closing balance) for all the items?
It needs to be a monthly report.

Yes there is, please check Inventory value report in inventory management module. This report is setup based & with minimal setup you can generate the required information.
You can setup the inventory value report through Inventory management > Setup > Costing > Inventory Value report.
You can access the inventory value report through Inventory management > Reports > Status > Inventory Value report.
