We took the most recent 10.0.18 updates to our D365 F&O installation and are running that version in our Prod and Sandbox environments so I should be able to pause updates without issue. I'm trying to pause the 10.0.19 update in LCS. I move the slider over to YES to pause updates but the SAVE button is not enabled and if I leave the page the pause updates setting reverts to NO. Any suggestions?

DO you have the correct permissions on the LCS project? If so, and in case you still have this issue, I would recommend to contact Microsoft Support for some help.

"Save" button is only working for the update settings as for the update cadence. For example, if you try to do a change in any of the fields for 'Update cadence', you will see that the "Save" button is not greyed out anymore.
In order to pause the next updates, since your environments are currently on 10.0.18, after switching the button from 'No' to Yes', a new link will show up above, called 'Edit Settings'. After clicking on 'Edit Settings', a new dialog will be opened on the right part of the page and you will be able to pause the updates, as needed.
