All the document types are added as buttons in the init method of DocuView form.
You can include your logic here to include only some of them based on the related table.
By filtering the document type list shown in the attached prtscr, I mean showing just some of them based on the related table.

Could you please explain what you mean by filtering document type list?
If you are looking for where they are setup, you can go to Organization administration > Setup > Document management > Document types.
