There are several out of box services in FO already and I would like to see if I can connect to them through middleware, but I am not sure how to find their endpoints. For example, the "AvailabilityService" in the screenshot in below, how could I find the end point for it?

As Sukrut mentioned, you need to have a look on the documentation mentioned.
Plus, to get the endpoint of the AvailabiltyService, you can right click on the service > find reference. It should give you two references, one is for security privilege and another one for service group. the service group is what you want. as shown in the below screenshot (MonitoringAndDiagnosticsServices)
So an example of your endpoint is
https://usnconeboxax1aos.cloud.onebox.dynamics.com/api/services/MonitoringAndDiagnosticsServices/AvailabilityService/
https://usnconeboxax1aos.cloud.onebox.dynamics.com/soap/services/MonitoringAndDiagnosticsServices?wsdl
