Help with class demo data - setup and testing?

Would anyone out there be willing to help me implement NAV for a class project to automate a food bank warehouse operation?  I teach for Purdue and have used AX previously, but we hired consultants to help us with all the setup.  I'm wanting to automate and barcode their inventory and order entry processes.
