After the Employee creation, you can edit the Employement Category. Go to the Employee profile screen --> Work History --> Employment Details

It can be edited in Employee form -> Work -> Employment history -> Date manager or in Employee form -> Work history tab -> Employment details.
To use a second option and have "Work history" tab you need to enable feature called "Streamlined employee entry".

Hello Ana,
Worker is one of the base entities in CDS that is needed across D365 products, other worker types that you see are coming from the first releases of CDS.
We only support the Employee and Contractor worker types in HCM. However, we have added an additional field in personnel management that allows for additional tracking. Customers can further categorize the types of employees/contractors they have. This can be found under personnel Management -> Links -> Setup -> Employment categories.

It is not possible to add values in CDS as the form will show the default options which are controlled by the application metadata. This metadata does not have the custom added values in CDS.

This is the Enum in the base product and I don't think so it is sync with CDS. If you create a custom field with same values and add more values in CDS then it will show under the custom field.
Note: This is my just observation. It should be confirmed by someone from MS support.
