I am trying to get log changes for just the customer data changes done by super users. How can I configure them in the system.

What's your version of AX?
Do you understand AX DB log in general? If not, you should look into documentation. If you do, what specific problem you have in your case?

Define DB log for customer tables

The major issue that you will have is identifying the correct tables that you need to log as customer data and related information is stored in several different tables.

you can enabled DB log, keep in your mind, it will bring some performance issue. how frequent are you creating or updating customer or do you have any functionality where custtable keep update through code. what do you mean by super users.
You can configure DB log as mentioned below but make sure you are clear on this functionality.
