Exported Data Map - Where can I find documentation on the options to modify it

Is it possible to modify the exported data map in such a way that I can assign concatenated columns to an entity field? Or assign a constant value to an entity field, or use other string operations in the data map to customize the import to a degree. The Import Wizard doesn't seem to be very flexible but since the data map can be exported, I am assuming that the XML can be changed to customize the import.

I can't seem to find documentation that describes how to customize the XML.
