Cloud SaaS vs PaaS

Hey guys, hope all is well with everyone. Just need help with a very simple question.

We are planning to make our migration from Dynamics CRM 9 On-Prem to Cloud, i am currently in the process of gathering information and data of what this process may look like. One clear answer that i have not been able to find is as follows:

Are there any differences in features that we will have access to depending on you implementatin method? SaaS vs Paas vs IaaS

If i choose SaaS vs PaaS do i lose availability to any features based on the method we use? or are All cloud features available regardless the "as a service" method we choose? 

Are some features availalbe as SaaS Only?

    Gary Cook thanks for the quick reply, do you by chance have a link to complete list of SAAS features? I’ve been seeing information but it’s very vague.

    PaaS will be the same on premise version you currently run, just running on Azure hardware. You will not have access to the SaaS applications like marketing, insights etc. You would be able to use automate and canvas apps but would have to use the legacy connectors to dynamics and not the dataverse connection
