The closest to a list of setup tables in Dynamics GP I can think of, is the following article:
support.microsoft.com/.../how-to-copy-setup-tables-from-one-company-to-another-in-microsoft-dyna
It's a bit outdated, but the setup tables for the main modules are pretty much the same.
