It is a common problem with Dynamics that internal emails are tracked if contact creation is on. I have that part under control, but customer also use marketing. If a internal employee register for an event a lead/contact is created and we potentially gets issue with tracking on these autogenerated contacts.
Is it a good idea/necessary to make a workflow that says "if internal emailaddress, change it to something else/dummy email":
I think you're on the right path with respect to building a workflow to prevent any issues with autogenerated contacts/leads for internal employees. I would be interested in what others in the community have done to solve this problem.
