Is there a way to undo a payroll attendance accrual once it has been done? The wrong date was entered in the Accrue attendance through: box and now all the employees have extra Paid Time off on their paystubs.

There is no way to undo an attendance accrual once it has been processed. Depending on how your Attendance accruals are set up, will depend on how you can fix the overage accrual.
If you have a test company, go into that test company, and test some methods by running a payroll and do not run the accrue on those payrolls so the employee’s accrual overage can be caught up. Some scenarios you can try testing are:
Change the Next Accrual Date in the Employees Attendance Maintenance window >> run a payroll to see if did not accrue.
Update the information on the Employees Attendance Maintenance window go to Human Resources Preferences window (Microsoft Dynamics GP menu >> Tools >> Setup >> System >> Human Resources Preferences) >> mark the option “Edit Attendance Maintenance and Earnings History”.
