Generally speaking, you need to do this through development. The provided link should point to the right direction.
I think you can also change the labels on a specific form, which I would not recommend as Microsoft may introduce a new form and that means your customization is gone if you use the new form. Also, the same field might be available on different forms.

Another approach, which I dont recommend, but I mention it for the sake of completeness, is to personalize a label on the form and distribute to certain or all roles. The drawback is obvious, if you miss a role or create a new one, the label change is gone. Also if you dont delete personalizations from the users, they may switch to their pesonalization, leaving the published view and the label change aside. On the positive side is that you dont need a release and you can do it right away in the application. If you want to read more about this approach:
