Collection process automation - email template per collection level

Hi
 
In the collections process setup, I've in previous questions in this forum that it's possible to have a business document of /level 1/ and another of /level /, but in current Dynamics I only see /Collection per customer/.
 
Has the option of different levels been removed?
 
And basically, I would like the accompanying email to the customer, when the collection letter is sent, to have different wording (and mail recipients).
