Hello,
What is the best way to create a solution which will send notification when new activity happens in a case?

Run a workflow that checks for Regarding a Case on new Activities when created. You can send an email notification there. I don't recommend this, as it can easily turn into email hell, but it's possible.
So I will need to create several workflows for each type of activity (email, call, task, etc)?
Well, don't make one for emails, or you'll end up in an endless loop as you email everyone regarding the case. ;)
In all likelihood, all you will need is Tasks, Appointments, and Calls.
I do, just set an exclusion condition ;)
