If you are trying to setup database logging, but the "Finish" button is not enabled in the last step, then the issue is probably that there is a message on the screen, telling you that a clean up job must be configured.
Setup that clean up job and try doing the logging setup once more, then you will be able to finish it.
For now you can check the table that contains the voided orders. There you need to find the record for the sales order in question.
I believe the table has a "Created by" indicator, which should show the user who created the voided sales order record and thus deleted the sales order.

If the system field Created by is enabled on the voided sales order table, you can check who deleted the order. If not, it is possible to extend the table and enable the system field or set up a database log.
