The short answer is that there's a very strong preference for structured data and while technically it could work with unstructured data, I can't really think of a use case where it would make sense (that's not saying there isn't one).

You can ingest json or delimitted text and shape it, but in order to have a map back to a customer or activity, you are going to ultimately have some constraints.
If you don't mind sharing, what scenario would you be looking at that would necessitate unstructured data?
