I need to setup database log for the table created by me. Is this possible?.

It's the same regardless of who created the table. If you have a problem with setting up logging for you tables, it would help if you explained what kind of problem it is.
I am not able to do the setup for delete action.
This is not related to customized tables; it's the same with all tables. "Delete" doesn't make sense when you're configuring individual fields, because you can't delete a field, you can merely update its value. Insert, update etc. can be used when you're setting up logging for the whole table.
